My Christmas Baking List

Sorry for the lack of posts lately… I’ve been planning my baking list for Christmas! I’ve got two Christmas parties to go to and I’ve been deciding what to bake to bring over to these parties. I’ve decided to re-use recipes I’ve tried before with a few modifications:

The first party is going to be a home-style steamboat, so I’ve volunteered to bake a Christmas dessert. I’m decided to bake a Chocolate Swiss Roll with Chocolate Meringue Buttercream Filling and Peanut Butter Frosting. Haha, I know it has a really long name, but I’ve made the Chocolate Swiss Roll and the Peanut Butter Frosting before (click the names for the links to the recipes). The new element here would be the Chocolate Meringue Buttercream for the filling – it’s supposedly less sweet than normal chocolate buttercream but it’s a bit tougher to make as it consists of egg whites that need to be whipped for a very long period. Will definitely share the recipe if it works! (: I’m also going to try to decorate it into a log… to boost the Christmas mood!

The second party is a potluck, and X and I need to bring a food item each, so I’ve decided to make a Non-Bake Baileys Cheesecake. Well, it does not need to be baked and can be made ahead of time, which will free some time up for me to make the second food item! The difference this time round is that I’m gonna be making it in a 9×9-inch square tin. Hopefully I won’t screw up on the chocolate swirls…

The next food item I’m making would be the Chocolate Cupcakes with Peanut Butter Frosting! I love, love, love these cupcakes, and I hope those who will try it during the party will like it too (: I’m gonna bake them in even small cups – so I think cake + height it’s gonna be about 2-inch tall? I’m making a huge batch of frosting ahead too, because I’m gonna be using it for the Swiss Roll. This will help to save some time. (:

With Christmas, there must be gifts! I contemplated baking some “healthy” cookies for my friends but in the end decided on baking these Chewy Chocolate Brownie Cookies instead. I don’t see the need to be healthy during this happy and jolly festive season!

And this is my baking list for this year’s Christmas – though they are not very traditional (no gingerbread man / woman cookies or gingerbread house). Haha, but I find comfort in baking things I’ve tried before – I know they will hardly go wrong!

  1. ohhh the non bake baileys cheesecake looks delightful. I don’t think I have seen that one from your recipe archive. I also have some holidays parties coming up so may borrow a few of your recipes for the spread… take care
